Focaccia with cherry tomatoes, rosemary and thyme recipe

You will need to make the starter for the dough the day before. This is delicious eaten with an Aperol Spritz, ice-cold with two fat slices of peeled orange in each glass.

INGREDIENTS

For the starter

  • 190g plain flour
  • 190ml lukewarm water
  • 1g fresh yeast

For the dough

  • 360g plain flour
  • 240ml water
  • 4g fresh yeast
  • 10g salt
  • Olive oil, for brushing

To serve

  • 8 cherry tomatoes, halved
  • 1 sprig rosemary, leaves, finely chopped
  • 1 sprig thyme, leaves, finely chopped
